Blackberry Fool

  • ½lb (225g) blackberries
  • 2 teaspoons vanilla essence
  • Sugar to taste
  • Cream

Place the fruit in a pan with enough water to cover it. Cover the saucepan and cook slowly until berries are soft. Add sugar to taste and the vanilla essence. Stir until sugar is melted. Put through a sieve. Whip cream and fold into the blackberries. Unless you have a very sweet tooth, be careful not to add the sugar with too heavy a hand.
