Dulse Hash

  • 450g potatoes
  • 1 teaspoon mustard seeds
  • 25g dried dulse, torn into bite sized pieces
  • 2 tablespoons olive oil
  • 2 cloves of garlic, crushed
  • 1 small onion, chopped
  • 4 chopped mushrooms
  • 1 sweet red pepper
  • A sprinkle of cayenne pepper and paprika

Partially cook the potatoes in boiling water. Allow them to cool, then peel and cut into cubes. In a heavy frying pan heat oil and when hot add mustard seeds and potatoes. Fry until pale gold and then remove potatoes from the pan. Reheat the pan stir-fry the garlic, mushrooms, onion and red pepper for 5 minutes. Add the dulse and potatoes and continue cooking, stirring constantly for 10 minutes. When it is nearly cooked, add a sprinkle of Cayenne pepper and paprika.
