Hawthorn blossom Liqueur
A 500g jar with a good sealing top is packed full with hawthorn blossoms and then covered with brandy or whisky. As little air as possible should remain in the jar. Strain after a fortnight or so, squeezing out all the liqueur. A teaspoon of sugar is carefully melted (with a drop or two of water) and, when cold, is added to the liqueur and thoroughly stirred. Leave for a few hours before bottling. It is ready to drink straight away.
